I've recently described how create colour-coded sections in a book, a brochure or a magazine. This is how coloured edges look in a brochure:
It is a 'yellow pages' type directory in The Property Guide to Normandy, written, designed and produced in iWork/Pages and printed on a flat-bed press in France.
To make coloured edges in your publication, use shapes or boxes with Color Fill. Position them as bleeds – going over the outside margins in the pages of your publication. When it is trimmed and bound by the printers, the colour shows as a section in the publication.
